インド料理あれこれQ&A
In this section, we have summarized responses to some of the questions from our customers. We will be pleased if these answers help you to consider trying Indian cuisine.

Q. What types of Indian foods exist?

A: As you know, India possesses the vast expanse of the land so we have various kinds of food cultures by regions, ethnic groups, and religions. We can roughly divide these food cultures into two groups: North Indian food group and South Indian food group. People from the North Indian food group live on breads such as naan and chapatti, while those in the South Indian food group, they live on rice. Both of them use a variety of spices. And at Ganesh we provide North Indian foods by using dairy products such as milk, butter, yogurt, and fresh cream to give a rich, creamy taste.

Q. I heard that Indian foods are very hot. Are children able to eat them?

A: Most people think Indian foods are hot, and indeed some of them are but that is an important characteristic of Indian foods. And there are also reasons for it. Firstly, spicy foods whet our appetite. Since most of the regions in India are very hot, we need something to stimulate the desire to eat. Secondly, eating spicy foods help people to lose weight. The major source of the hotness comes from red peppers since they contain capsaicins which decompose fat, so Indian foods are effective in losing weight.

Actually, there are a lot of hot foods in India but not all of them are hot. Mild foods are given to persons with illnesses, little children, and elders. At Ganesh, we normally provide you with a mild curry. However, we are also able to provide you with 8 levels of tastes ( very very hot, very hot, hot, little hot, normal, little mild, mild, child mild) so feel free to ask about these various levels.

Q: How many spices do you use?

A: We make the best use of 18 kinds of spices. It sounds very hot but not all of them are hot. There are two different purposes other than hotness. One is for aroma and the other is for color. For example, clove and cinnamon are for aroma, and they also increase your body temperature and aid digestion. Turmeric is for color. It normalizes the function of the liver and also adjusts the function of the stomach and intestines. In India, spices and herbs are considered as gifts from nature and we believe that Indian foods are natural medicine. Therefore, housewives make their own spices (garam masala) for their family’s benefits.
